Huaiyang Cuisine - Symbols of Jiangsu

The Huaiyang Cuisine is a well-known cooking style of the regions surrounding the middle and lower reaches of Yangtze River, derived from the region surrounding the lower reaches of the Huai and Yangtze Rivers, centered upon Jiangsu, An’hui, Shanghai, Zhejiang, and some areas of Jiangxi and Henan. Yangzhou and Huaian are acknowledged as the hometown of Huaiyang Cuisine. Huaiyang Cuisine has a long history, starting from the Spring and Autumn Period, prevailing during Sui and Tang Dynasties, and flourishing during Ming and Qing Dynasties. It is dubbed as 'the first delicacy of the southeast region' and the 'best cuisine in the world'. It represents the collective wisdom of Jiangsu people for thousands of years, being a precious cultural heritage, with its reputation spread in the whole world.
